The Oiling of America Sally Fallon
1:30pm - 3:00pm

Our ancestors traditionally consumed saturated fats from animals and plants such as coconut and palm oils. Only in the the past fifty years have these life giving foods been demonized by the 'scientific' and medical community. Sally Fallon will walk us through the history of heart disease in America and how we have been conned into thinking that these traditional foods are bad for us. There will be an extensive discussion on the dangers of cholesterol lowering drugs and what we can do to actually prevent heart disease strictly by the food choices we make.

Agriculture & Industrialization- A Cain & Abel Story Jerry Brunetti
1:30pm - 3:00pm

The metamorphosis of humankind from a hunter-gatherer to agrarian species has produced untold amounts of positive and negative consequences for human society and mostly undesirable consequences for the natural world. Grain-based diets afforded the assurance of food security and stable, centralized governments. With those "perks" however, came the tremendous loss of bio-diversity, topsoil erosion, water exhaustion and diets overwhelmed with empty calories and man-made toxins. By contrast, farming systems which work in harmony with nature can produce life-building food. And farmers who seek to innovate and farm differently will be rewarded by the increasing numbers of consumers who care and are seeking more from their food supply.

The Truth About Heart Disease Dr. Natasha Campbell-McBride
3:30pm - 5:30pm

Everybody 'knows' that heart disease is caused by artery clogging fats and cholesterol. We have been subjected to this propaganda thanks to the diet heart hypothesis which has dominated medical thinking for decades. However recent scientific developments are clearly illustrating that this hypothesis is wrong. Dr. Campbell-McBride will talk about what really causes heart disease, how and why it develops and why it is the number two killer of Americans. She will go on to explain what each of us can do to prevent heart disease and even reverse it.

Cows Make Milk, Not Beans Karen Lubbers
3:30pm - 5:30pm

Karen Lubbers six-year-old daughter was diagnosed with brain cancer in 1993. In response, the family bought a cow. Karen will share their journey to health and what Rosy, the cow, taught them. It’s good that raw milk has a short shelf life. Dirt matters. Embrace the bugs in the milk, and elsewhere. Respect the seasons reflected by raw milk. Beans don’t make milk—cows do. Cow power is freedom. If you’re going to eat it or drink it, name it. There is good in the outlaw status of raw milk. You can’t have just a cow. It’s far more than that.
